Banana Milkshake Cake

The last week in March is always a busy week in the Harden's family for birthdays with my Dad celebrating his on the 30th and my brother on the 31st of March. Naturally, each occasion needs cake! For Dad's cake I took inspiration and recipe from the Primrose Bakery cookbook which I got for Christmas. One of Dad's favourite things to drink is a big glass of banana milkshake so with a little tweaking their strawberry milkshake recipe would be perfect choice for my Pops. The sponge recipe for this cake uses only egg whites rather than the whole egg and also has yoghurt in it which meant the the finished result was very light and moist. The remaining slices are now in the freezer for Dad to have at a time when he choses most likely warm with custard.



To make a banana milkshake cake you will need:
  • 390g Plain flour
  • 1 Tbsp baking powder
  • 1/2 Tsp sat
  • 250g Unsalted butter
  • 450g Granulated sugar
  • 7 Large egg whites
  • 115g Yoghurt
  • 115ml Milk
For the milkshake icing you will need:
  • 120g Unsalted butter
  • 600g Icing sugar
  • 30g Cream cheese
  • 3 Tbsp of your chosen milkshake flavour powder dissolved in 4 and a 1/2 tbsp of milk

First things first - preheat your oven to 180c fan and grease and line 3 20cm sandwich cake tins.

  • Combine the flour, baking powder and salt in a bowl. Set aside for later.
  • Cream the butter and sugar together until light and fluffy.
  • In a third bowl mix the egg whites, yoghurt and milk together before combining all three mixtures together, folding gently until fully combined.
  • Divide the cake batter equally between your pre-prepaired cake tins.
  • Bake for 20-25 minutes until golden brown, springy to the touch and until an instead skewer comes out clean.
  • Leave to cool completely before icing.
To make the milkshake icing:
  • Combine all of the ingredients and whisk until light, fluffy and smooth.
To assemble:
  • Sandwich each layer between a generous helping of milkshake icing, finishing with a smooth layer on top.
  • Add any decorations you fancy. I chose to add dried banana and a sprinkling of gold glitter!
