Vegan Hot Dogs

A few weeks ago I had a lovely weekend in York visiting my bestie - during a little stroll around Bishopthorpe which is a lovely little area of York not far from the centre, we came across a quaint little cookware shop where we both indulged in some new baking bits and bobs. Amongst the things I brought was a hot dog cookie cutter. It wasn't long and I had already decided that I would use this to create 'hot dogs' having been inspired by the puns and play on words that feature so heavily in Frances Quinns 'Quinntessential Baking'.

These biscuits are a dairy free shortbread flavoured with chilli flakes, drizzled with plain chocolate and some extra chills at one end for those who like a bit of a kick! This batch were also made using gluten free flour so that my sister didn't have to miss out! As they were gluten and dairy free the dough is very soft and tricky to handle as it can very easily become misshapen and tear. So, patience is key with this bake. You can of course substitute the dairy free butter for dairy butter and the gluten free flour for standard plain flour if you wish.

Right - lets get baking!

To make around 20-25 hot dogs you will need:

  • 225g Gluten free flour
  • 110g Cornflour
  • 225g Dairy free spread (I used vitalite)
  • 1/2 tsp Salt
  • 110g Caster Sugar
  • 3/4 tbsp Chill Flakes
For decoration:
  • 50g Plain chocoalte
  • Chilli Flakes
To make the biscuit dough:
  • Mix all of the ingredient together, use your hands to finish the mixing and form a smooth dough. Wrap the dough in clingfilm and chill for at least 30 minutes. The longer the better!
  • Towards the end of the chilling time heat your oven to around 180c fan.
  • Lightly flour your work surface and roll the dough out to between 3-5mm thick. Using a biscuit cutter of your chosen shape (you don't have to use a sausage dog cutter, it is only integral for the pun to work but makes not difference flavour wise) cut out your biscuits. Re roll the dough as needed.
  • Place the dough on baking sheets and cook your biscuits for around 12 minutes or until golden brown.
  • Allow the biscuits to cool completely on the baking trays. These biscuits are quite brittle. If you are using standard flour or dairy butter this will give extra strength to the structure.
To finish:
  • Melt the chocolate and drizzle over the cooled biscuits. Sprinkle some extra chilli flakes on the chocolate before it sets. It is wise not to put extra chilli over the whole biscuit unless you really like spice!

And that's all there is to it - very simple biscuits with a kick!

Let me know how you get on or if you have made anything else based on a pun!

Happy baking - Rach x
